The sixth edition of the festival is set to take place on Sunday, August 2, 2026, from 08:00 to 19:00 at the historic Ex Hotel site in San Antonio, Central Department. This year, more than 30 exhibitors from across Paraguay will gather to serve an array of fish-based specialties. Attendees can look forward to a lively atmosphere filled with live music, cultural performances, cooking demonstrations, and the festival’s signature competition to crown the best piracaldo.
Celebrating a Riverside Culinary Tradition
At the heart of the festival lies piracaldo, a dish that translates to “fish broth” or “fish soup.” This culinary gem is one of Paraguay’s most representative riverside dishes, traditionally prepared in cast-iron pots over an open fire. The dish combines fresh river fish with a medley of vegetables and local seasonings, creating a flavorful experience that has been passed down through generations in fishing communities. Piracaldo is not just a meal; it’s a symbol of cultural identity and community heritage.
Founded in 2019, the National Piracaldo Festival was established to position San Antonio as a gastronomic destination. Since its inception, the festival has seen a steady increase in attendance, surpassing 10,000 visitors during last year’s edition. Its significance has been recognized at a national level, with the event declared of National Cultural and Tourism Interest, becoming an integral part of Paraguay’s official tourism route.
This recognition is part of a broader trend of acknowledgments from TasteAtlas for Paraguayan cuisine, following the consecutive titles awarded to Vori Vori as the world’s best soup and the inclusion of Paraguayan cuisine among the world’s top 100. Complete dishes will be available starting at ₲20,000 (approximately US$3.30), while tasting portions will cost ₲10,000 (approximately US$1.60). Admission to the festival is priced at ₲10,000, with parking available for ₲20,000.
