Eduardo Valle Lobo’s journey through the culinary world has been extensive. After honing his skills in acclaimed kitchens across Europe and the United States, he crossed paths with Kelly Jeun, a talented chef with experience in prestigious establishments like Eleven Madison Park and various restaurants in Italy. Together, they embarked on a culinary adventure that culminated in the opening of Casa Juani, their first independent venture as a married couple.

Casa Juani is designed as a marisquería, a seafood-focused restaurant that draws inspiration from Spain’s coastal regions, including the Atlantic Ocean, the Cantabrian Sea, and the Mediterranean Sea. The menu is a carefully curated collection of dishes that highlight the diverse culinary traditions of Spain, featuring in-house dry-aged products and regionally specific heritage dishes.

Designed by ARCH11, the 100-seat dining room is bright and modern, featuring crisp white walls, light oak finishes, and vibrant pops of blue and burnt-orange tile. A custom-built wine room greets guests at the entrance, and a full-service bar area flows into a live-edge black walnut chef’s table used for tasting menus.
In the center of the room, an L-shaped marisquería counter offers diners a front-row seat to the chefs as they prepare raw seafood dishes. The warm camel furnishings and artisanal plateware sourced from Madrid and Barcelona add to the restaurant’s inviting atmosphere.
Indoor-Outdoor Dining Experience
When the weather permits, retractable windows open onto an 18-seat heated patio, bringing a touch of Mediterranean-style indoor-outdoor dining to downtown Boulder. This feature enhances the overall dining experience, allowing guests to enjoy their meals in a refreshing setting.

Casa Juani is open from 5 p.m. to 10 p.m. Wednesday through Sunday, inviting diners to experience a unique blend of culinary artistry and heartfelt storytelling.
