Sabòr: Spirited Sensuous Spanish Cuisine At CHIJMES Singapore
Nestled in the vibrant CHIJMES courtyard, Sabòr has quickly become the go-to dining destination in Singapore. Taking over the space previously occupied by Privé, this restaurant radiates energy and warmth, with friendly staff ensuring that every patron feels welcomed and satisfied.
A Warm Welcome
As you step into Sabòr, the lively atmosphere envelops you. The restaurant is bustling with happy diners, and the staff moves seamlessly through the space, managing orders and reservations with grace. Even when faced with a reservation mix-up (my fault!), they handled it with professionalism, ensuring that our dining experience began on a positive note.
The Ambiance
Sabòr boasts a seating capacity of 100, split evenly between indoor and outdoor areas. The design is modern yet cozy, making it an ideal spot for both casual gatherings and special occasions. Happy Hour runs daily from 4:30 PM to 6:30 PM, allowing guests to enjoy delightful drinks and tapas until midnight.
Drinks to Start
No Spanish meal is complete without a refreshing drink, and Sabòr offers a fantastic selection. I recommend starting with a Sangria Roja, a vibrant and fruity concoction that sets the tone for the culinary journey ahead. The cocktail bar also features an array of wines, beers, and spirits to complement your meal.
Starting Line-up
Our culinary adventure began with Bread & Tomatoes ($12), a simple yet iconic dish. The quality of the ingredients shone through—fresh bread topped with ripe tomatoes, seasoned to perfection and drizzled with extra virgin olive oil. This humble dish perfectly encapsulates Sabòr’s commitment to using quality ingredients.
Classic Tapas
Next, we indulged in a selection of classic tapas, each bursting with flavor and designed for sharing. The communal dining experience is at the heart of Spanish culture, and these small plates encourage lively conversation and connection.
Croquette Jamón and Spicy Crab
We started with Croquette Jamón ($4/pc), a crispy delight filled with creamy Serrano ham béchamel. The Croquette Spicy Crab ($4/pc) offered a modern twist, featuring sweet crab meat with a gentle kick of spice.
Bikini Sandwich Sobrasada, Honey & Cheese
One standout was the Bikini Sandwich Sobrasada, Honey & Cheese ($18). This grilled sandwich, filled with melty cheese and drizzled with honey, was a delightful take on a classic tapas dish.
Chicken Wings ‘Dirty Pepe’
We also tried the Chicken Wings ‘Dirty Pepe’ ($18), which were sticky and indulgent, coated in a smoky-spiced sauce that left us craving more.
Verduras – Vegetables
For those looking to incorporate some greens, Sabòr offers delightful vegetable dishes. The Potatoes ‘Bravisimas’ ($16) are an elevated version of the classic Patatas Bravas, served with a spicy tomato sauce and aioli. The Calçots Tempura & Romesco ($16) features spring onions fried in tempura batter, served with a rich Romesco sauce.
The Main Attraction – Paellas and Charcoal Grill
The main courses at Sabòr are not to be missed. We had the option of Pork & Scallops Paella ($36) or Grilled Wagyu Beef Paella ($48). The latter, grilled over Binchotan charcoal, was a showstopper. The paella base was rich and flavorful, complemented by the juicy, tender Wagyu beef, creating a harmonious blend of textures and tastes.
Crispy Pork Belly, Green Apple
We also sampled the Crispy Pork Belly, Green Apple ($36). This dish featured juicy pork belly with perfectly rendered fat and crispy skin, paired with a refreshing green apple element that balanced the richness.
Don’t Miss the Desserts
No meal is complete without dessert, and Sabòr does not disappoint. The Crema Catalana with Cookies ($14) is a lemon-infused custard topped with a caramelized sugar crust, offering a delightful contrast of textures. The Churros with Chocolate ($12) were golden and crispy, served with a rich dark chocolate sauce that made for a perfect ending.
Our Take on Sabòr
With its authentic flavors, delicious food, and warm hospitality, Sabòr has quickly established itself as a must-visit dining destination in Singapore. The beautifully decorated indoor and outdoor spaces enhance the overall experience, making it a perfect spot for any occasion.
