This week, Fuerteventura showcases an impressive array of flavors, crafted from island products by talented chefs and professionals in the culinary industry. The emphasis is firmly placed on innovation and the revaluation of Majorera cuisine, captivating even the most discerning palates in attendance.

Celebrating Culinary Heritage and Innovation

Fuerteventura’s participation at Madrid Fusión this year includes two complementary spaces, where both culinary experience and tradition are at their core. This setup not only highlights emerging talent but also showcases the creativity within Majorera gastronomy. In collaboration with local wines, the island’s culinary essence is blended with innovation, a narrative of culture and community that resonates throughout the event.

Marlene Figueroa, the councilor of tourism for the Cabildo Insular de Fuerteventura, emphasized the significance of showcasing the island’s gastronomic talents, which contribute to the local economy. The team has ensured that many small-scale producers can innovate and create using traditional tastes, enriching the visitors’ experience.

Engaging Workshops and Showcooking Events

At the Saborea España stand, an exciting program of workshops, showcookings, and tastings is unfolding in front of professionals and specialized media. This interactive engagement allows attendees to experience firsthand the meticulous craftsmanship that defines the gastronomic offerings from Fuerteventura. To enhance visibility, the Patronato de Turismo has designed a dedicated space that features local gastronomy, spotlighting an array of products from various municipalities across the island.

Key figures from the island’s government are present at Madrid Fusión, including Marlene Figueroa and Matías Peña, the councilor of agriculture, livestock, and fisheries. Their presence underlines the importance of this culinary congress as a platform for the region—acknowledging the hard work and dedication of local producers and chefs who labor year-round to elevate Fuerteventura’s cuisine.

Culinary Highlights from Tuineje and Antigua

The first day of the gastronomic fair saw Tuineje steal the spotlight with a presentation that showcased local cheeses, olive oil, tomatoes, bread, fish, and the renowned cochino negro (black pig). Among the featured dishes was a stunning octopus carpaccio drizzled with olive oil and sprinkled with the island’s unique sea salt, alongside a rich fish broth called “sabores y saberes de las gentes de la mar,” which garnered significant attention from the audience. Álvaro Abaroa from the Restaurant of the Cofradía de Gran Tarajal was instrumental in presenting this dish, revealing the region’s deep culinary narratives.

Antigua also played a vital role by presenting escaldón de gofio, a traditional dish, as well as a delectable canary tuna brioche complemented by a red mojo emulsion. Crafted by culinary talents Julián A. Martínez Velasco and Felipe Fernández Ordoñez from the Restaurante Barceló Fuerteventura Beach Resort, these offerings were received with great enthusiasm. The presence of Matías Peña, along with Antigua’s tourism councilor Kristina Rodewig and the agriculture councilor Fernando Estupiñán, highlighted the collaborative efforts of the area’s culinary scene.
