La Lola Tapas Bar: A Taste of Authentic Spain in Kitchener
Nestled in the heart of downtown Kitchener, Ontario, La Lola Tapas Bar stands as a vibrant testament to Spanish culture and cuisine. From its carefully curated menu to its inviting atmosphere, every detail reflects the restaurant’s commitment to authenticity. Recently, La Lola received a prestigious accolade from the Spanish government, recognizing it as one of the few establishments outside Spain that serves certified authentic Spanish food.
A Special Recognition
Owner Vanessa Stankiewicz expressed her excitement about the recognition, stating, “It’s quite a big honour, if not probably the biggest honour for our tiny restaurant.” The accolade was presented by Alfredo Martínez Serrano, the Ambassador of Spain to Canada, who personally delivered the certificate. This recognition is part of the Restaurants from Spain Certification Program, which awards a seal of approval to restaurants that use authentic ingredients and recipes. La Lola is now one of only four restaurants in Ontario and nine in Canada to receive this honor.
The Ambassador’s Impressions
During the evaluation process, Ambassador Martínez Serrano noted three key qualities that set La Lola apart. First, the restaurant offers a diverse menu that showcases dishes typical of various Spanish regions. Second, the ambiance and facilities are authentically Spanish, creating a welcoming environment for diners. Lastly, its prime location in downtown Kitchener makes it easily accessible for both locals and visitors.
Kitchener Mayor Berry Vrbanovic echoed this sentiment, stating, “La Lola brings international distinction to downtown Kitchener.” He emphasized that the restaurant’s commitment to authentic cuisine contributes to the vibrant food culture in the area.
A Culinary Journey Rooted in Heritage
For Stankiewicz and her family, La Lola is more than just a restaurant; it’s a way to connect with their Spanish roots. With a Polish-Canadian father and a Spanish mother, Stankiewicz’s culinary journey began early. “Almost eight years ago, I was living in Madrid and working there. I met my husband, Miguel Pastor, who is a trained chef and creates the wonderful food at La Lola,” she shared. The restaurant serves as a tribute to her late mother, who would undoubtedly be proud of the recognition.
The Essence of Spanish Culture
La Lola is designed to be a gathering place, reminiscent of traditional tapas bars in Spain. Stankiewicz explained, “A lot of people come into our restaurant and their first comment is, ‘oh my God, it’s so small,’ and there’s a reason for that. In Spain, tapas bars are intimate spaces where people stand, chat, and connect.” This intentional design fosters a sense of community, allowing diners to rub elbows with neighbors and share in the experience of good food and conversation.
A Menu That Celebrates Diversity
The menu at La Lola is a vibrant tapestry of Spanish flavors, featuring a variety of tapas that highlight the richness of Spanish cuisine. Ambassador Martínez Serrano particularly enjoyed the diverse offerings, including high-quality cold cuts and an impressive selection of cheeses. “They have all the qualities to become the hottest spot in town,” he remarked, emphasizing the restaurant’s potential to become a culinary landmark in Kitchener.
A Tribute to Spanish Icons
The restaurant’s name pays homage to Lola Flores, an iconic figure in Spanish pop culture known for her contributions to cinema, music, and flamenco. Stankiewicz explained, “We have admired her heavily in my family and my husband’s family. We want people to enjoy a true authentic experience.” The decor is adorned with posters of Flores, further immersing diners in the Spanish cultural experience.
More Than Just a Meal
La Lola Tapas Bar is not just about serving food; it’s about creating an authentic experience that resonates with the growing Spanish community in the Waterloo region. Stankiewicz’s vision is to replicate the communal atmosphere of Spanish tapas bars, where food serves as a catalyst for connection and conversation.
In every dish and every interaction, La Lola embodies the spirit of Spain, inviting guests to savor not just the flavors but the culture and community that come with it.
