The history of Los Pinchitos began when Carmensa Rodríguez, alongside her husband Miguel, opened their doors after returning from El Aaiún. Carmensa brought with her a wealth of recipes, notably the goat stew, which she meticulously crafted for the family bar. Today, her daughter Gloria has taken up the mantle, continuing this culinary legacy while adding her modern twist.

A Day in the Life of Gloria Rodríguez

Every day, except for Christmas and New Year’s Day, the day begins early for Gloria Rodríguez. Rising at six in the morning, she prepares the goat meat—a labor of love that involves slow cooking to ensure that the flavors meld beautifully. “It’s a dish that must be cooked daily,” she explains, echoing the lessons learned in her childhood. She emphasizes the importance of freshness, stating, “The cheese is from Guriamen in Villaverde, the tomatoes come from Tiscamanita, and the potatoes are local. It’s essential for me to source quality ingredients.”

Balancing Tradition with Modernity

Gloria is the second of four daughters born to Carmensa and Miguel. The restaurant has witnessed her growth from a child in the kitchen, inspired by her parents, to a skilled chef and entrepreneur in her own right. While she reinvigorates the menu with contemporary additions, such as watercress croquettes, she remains committed to the classic recipes that defined Los Pinchitos in its early days.

In October 2017, a significant transformation took place at Los Pinchitos. During a month-long renovation led by Miguel Ángel Chacón, the restaurant was given a modern facelift while preserving the spirit and memories of Gloria’s parents. The initial design—a simple space with barrel tables—was reimagined into a warm and inviting dining atmosphere. This thoughtful overhaul drew in an even wider audience, eager to indulge in traditional cuisine within a refreshed setting.

Though Gloria’s early years as a restaurateur were filled with challenges, she feels a sense of ease now as Los Pinchitos continues to thrive. With a balanced approach to innovation and tradition, she has struck a chord with both the community and visitors, making it a must-visit stop in Lajares.
