Culinary Creativity Unleashed: The Canary Islands’ Student-Curated Cookbook
The vibrant culture of the Canary Islands is celebrated in many forms, and one of the most delicious ways is through its traditional cuisine. Recently, seven educational centers from the municipalities of Antigua and Betancuria came together to create a unique culinary project that embodies this spirit. They have launched a student-curated cookbook as part of Project Estela, illustrating the incredible potential of young minds and their culinary skills.
The Structure of the Cookbook
The cookbook is not just a single collection of recipes; it is a comprehensive publication divided into four distinct volumes, each showcasing the diverse culinary talents of the students across various age groups. The students in Early Childhood Education focused on dessert recipes, providing a sweet touch that resonates with every palate.
Meanwhile, first graders in Primary Education tackled the task of creating starter dishes and first courses. Their ingenuity shines through as they explore a variety of flavors and ingredients that represent the Canarian culinary identity. The sixth graders took on the more substantial responsibility of crafting main dishes, showcasing their skills and creativity in preparing hearty meals that could grace any dining table.
Lastly, the first-year ESO students chose to venture into the realm of sauces and dressings, an essential component of Canarian cuisine that enhances the flavors of each dish. This division of labor among the students not only highlights their individual talents but also emphasizes teamwork and collaboration throughout the project.

Marta Lorenzo, the project director and a dedicated teacher, presented the finished cookbook to Matías Peña, the mayor of Antigua. The project received funding from the Canarian government, underlining the significance of this initiative in promoting local culture and culinary arts.
The schools involved in this ambitious project include diverse centers such as Triquivijate, Betancuria, Valle de Santa Inés, and others like the unitary schools of Valles de Ortega and Ampuyenta, along with CEO Antigua and CEIP El Castillo. This collaboration brings together different educational settings, creating a sense of unity and shared purpose among the students and staff while celebrating the rich culinary traditions of their homeland.
