Bar ILU, which opened its doors earlier this month in the former Old Philadelphia Bar in Kensington, is transforming the local dining scene with its unique Spanish perspective. This 40-seat establishment has taken what was once a corner shot-and-a-beer joint and infused it with a vibrant, social atmosphere reminiscent of Madrid’s lively cocktail lounges.
A Design That Tells a Story
As you step inside Bar ILU, you’re greeted by a striking interior that blends retro charm with modern elegance. The bar twists through the room like a river, culminating in a spacious loop in the back. Large windows line the walls along Dauphin and Martha Streets, allowing natural light to dance across the floral wallpaper and black pressed-tin ceilings. The warm, red-amber lighting and curved wood details create an inviting ambiance, steering clear of typical Spanish clichés like bullfighting posters or terracotta overload.
A Personal Touch
The name “ILU” pays homage to partner Patrick Iselin’s grandmother, Iluminada, rather than being a shorthand for “I love you.” Iselin, who has roots in Madrid, is one of four partners behind this venture, alongside Jason Evenchik, Sal D’Amato, and Scott Coudriet. Their collective experience includes a portfolio of successful establishments, such as Vintage and the Goat Rittenhouse, positioning Bar ILU as a noteworthy addition to Kensington’s burgeoning restaurant scene.
A Culinary Journey Through Spain
Unlike its neighbor, the Cormorant, which leans more towards a traditional bar setting, Bar ILU emphasizes its culinary offerings. The food menu is curated by executive chef Pat Szoke and chef de cuisine Andrew Butler, aiming to deliver a dining experience akin to what one might find in Madrid. “It’s not tapas exactly,” Evenchik explains, “It’s more raciones,” indicating a focus on larger, shareable plates.
Menu Highlights
The menu features a delightful mix of familiar Spanish staples such as tortilla española, croquetas, and gambas a la plancha, alongside unexpected items like a calamari sandwich—fried calamari served on a baguette with saffron aioli. Most smaller plates are priced between $4 and $14, while sandwiches and larger dishes range from the high teens to mid-$20s, making it accessible for a variety of diners.
Crafting the Perfect Drink
To complement the food, Bar ILU has enlisted bartender Dan Greenbaum, known for his work at renowned New York cocktail bars. The drinks menu is thoughtfully designed, emphasizing Iberian flavors with a robust selection of sherries, including manzanilla and fino. Approximately a third to half of the cocktails incorporate sherry or other Spanish ingredients, ensuring a cohesive experience.
A Modern Approach to Cocktails
The cocktail menu is diverse, featuring martinis, rye drinks, and coffee cocktails, steering clear of the typical “Spanish theme night” vibe. The aperitivo section offers lower-ABV drinks built around vermouth and Campari, with cocktail prices fitting comfortably within the neighborhood—mostly around $16, with sherries priced between $8 and $15.
A Journey of Preparation
The inception of Bar ILU has been a labor of love, taking nearly three years to come to fruition. The team faced various challenges, including construction issues typical of century-old buildings. During this time, they embarked on a research trip to Madrid, immersing themselves in the local bar culture, from tapas bars to historic sherry establishments.
Capturing the Essence of Madrid
Evenchik emphasizes that many Spanish bars in the U.S. often feel overly themed, lacking the authenticity found in Madrid. “We didn’t want to go Disney,” he asserts, aiming instead for a modern interpretation that reflects the true spirit of Spanish dining. The seating arrangement is snug, with a limit of four per party, fostering an intimate dining experience.
